Turns out this basic radio has "Modes". It was on "mode 1" which I guess puts the elevator on the left stick.
I've never heard of such a thing, but hey, I'm pretty new to this hobby.
It's now back on "mode 2" and working fine.
Here are the modes for RC radios.
