Not so much cutting the parts out, but a lot of wood in older kits may need to be replaced. I keep my kits in my dehumidified, basement workshop. Not all kits are so lucky
I built an original wood Dirty Birdy kit about 10 years ago. I had to replace a lot of wood (either warped or rock hard) and the canopy was permanently deformed (probably from too much heat) and got replaced with an all wood version.
People pay a lot of money for unrestored old/antique cars; then pour more into them to return them to original condition - whatever you enjoy
...of course some people play golf and I don't get that at all
