In my opinion, within reason, more torque is better for jets than more speed. The reasons are two fold. First, I have heard many claim they can tell the difference in a faster servo while flying, but I have BIG doubts if anyone can tell the difference between a .09 sec transit time and .20 while flying. Secondly, the higher torque may help delay the onset of flutter on a control surface.
