Osiris is pretty much right.
Good engine temps are between about 220F to 270F.
But don't just use temps to go by when breaking in and tunning.
I would suggest using the temps only as a safety point and guide line, with visual (amount of smoke in exhaust) and the sound of the engine as your main two tunning guides.
