Default Ascent Glider Overkill / Thoughts?

I recently "Pimped My Glide" because I was not too impressed with the stock engine power of the E-flight Ascent park flier (love the plane, however). I had tried to fly it in 10-12MPH winds and the thing just got tossed around like a rag doll. SO, I installed a Six-Series Brushless 2700 kV Motor (28mm) by E-flite and am now using 2-cell LiPo 2070 mAh to power it up. I'm using a 25 Amp Pro ESC (E-Flight) which I think has the potential to burn out and installed a Graupner CAM 6x3 folding prop and this is what I can say:

1. Winds aren't an issue at all anymore
2. Super fast
3. Vertical climbs (no kidding) to 1500 ft. in 30 seconds or less

Here's my question: Overkill? What ESC would work best for that engine? And what other electrics can i plop the Six-Series into?
