Rather than compromise the integrity of the hinges by removing the ailerons, I normally just recover them without removing them. It can be more difficult to to do a good job, but its not impossible.
Having said that, if the original hinges are CA hinges, I think its worthwhile to cut the old hinges off and then reslot (in new positions) for pinned hinges. But that's a personal preference, not a technical "must do".
And one more note. If this is your first covering job and you think the factory job is bad, wait till you see the final results! You'll want to buy twice as much covering as you think you'll need because you will be redoing a lot. But stick with it. It does get better with experience.
