Rather than compromise the integrity of the hinges by removing the ailerons, I normally just recover them without removing them. It can be more difficult to to do a good job, but its not impossible.
Having said that, if the original hinges are CA hinges, I think its worthwhile to cut the old hinges off and then reslot (in new positions) for pinned hinges. But that's a personal preference, not a technical "must do".
And one more note. If this is your first covering job and you think the factory job is bad, wait till you see the final results! You'll want to buy twice as much covering as you think you'll need because you will be redoing a lot. But stick with it. It does get better with experience.

Excellent thread! I have been fighting this same problem, though due to an aileron repair. I used clear tape instead of covering it correctly [X(]. Now I see how simple it is to do it right, guess what part of my plane will be getting new blue ultracote this week[>:]

I have done this, because I like to make my planes look nice, I learnt how to cover from (I beleive) minnflyers videos here on RCU, they are very good take a look. For the hinges I simply looked at the problem and engineered a solution, a buddy of mine in the same club does the same thing, he wrote a series of posts on our club forum on how to do covering, he is very good at it, this includes how to do hinges etc, just take a look here http://www.sccmas.org/smf/index.php?topic=284.0
