Governor mode lets the esc try to regulate the headspeed to some degree, depending on the esc it may or may not work well. I don't know about the align esc and how well the gov mode functions on it. You should be able to run without it and thats probably how I would go, just set your curves for what you are after. Find more info by searching/posting to an align forum.
You should be able to disable the bec function of the esc by removing the red wire from the esc plug that goes to your rx. Instead of cutting it, remove it from the connector and tape it up or buy a short extension and then cut/remove the red wire from it.
Depending on the esc/bec/rx combination, you may have to remove the signal wire from the bec if it has one, (orange or yellow usually). Leave the signal wire and ground from your esc and plug that into the thr channel. Keep the power and ground from your bec and plug that into the bat port on your rx.
