I don't know how well it holds over to helis because of the possibility of changing pinion gear to keep the head speed the same but I know for a fact that a higher voltage pack used in an airplane with the same capaity, ie... 2100mah for example, will result in a shorter flight time. Higher voltage also means your motor will run at a higher amperage.
