Yes, I know it's a weird comparison, but it does give me a little hope.

Would a positive prop angle get the rear of my hull out of the water more?
Yes way more. Saw Setups pull a rediculous amount of current. If you make more than 2-3 passes you run the risk of burning up the lipo's, esc, or motor. The motor, and esc, were over amped for each saw pass. You will not see anyone here on RCU try it unless they have SAW experience.

I logged around 60A on the SV ESC trying to spin a big wheel. Only ran for 30 seconds or so, things were starting to heat up, especially the motor.

You want the prop to point downward to increase lift. I believe this is in the negative direction. Also a better prop would help. More along the lines of a lifter type prop - high pitched. Or use rear ride pads.

Another thing to keep in mind CofG should be close to the turn fin, I like to keep it as close to the rear of the front sponsons as I can.
