Default RE: GP Extra 300S 60size Build

I finally got my engine. Picked up the FS 91S II - FI (fuel injection) model, needs a few items before I can get it running properly but tested and it at least starts then stalls out on me(never put my check valve on or my fuel filter so I guess that's a given that the engine won't run without the tank properly pressurized from the check valve.)
Here are some pics of my test buildup and my engine. Tomorrow will pickup the checkvalve and fuel filter so I can test this baby out. Nice engine, to bad they discontinued it and can't find much info on this engine online either. Did find the manual which is a bonus, glad I found that.
Sanding of plane is all complete, all sanded down to 2000grit wet/dry sandpaper (i used).

QUESTION REGARDING COVERING

Any tips I should know regarding multiple covering. Read that I should start at the trailing edge and work my way up to the leading edge, don't heat shrink until both sides are tacked and mainly done or warping may occur. ultracote over ultracote and monokote over ultracote, or ultracote over monokote???
What method would work the best?
LHS informed me I don't need any adhesive to apply any covering just heat gun and iron will do the job.
What would be the best to use, ultracote or monokote. The LHS has both makes of covering though being my first covering job I do not know what I should use or what will look better. Plan on doing a multiple color scheme with red white and blue.
