I'm not sure what advice I can give you on this. If the nut is spinning freely, I guess I would try and jam something in by the nut (like a screw driver or something) to keep the nut from rotating so that you can get the bolt out of there, and then I would make sure I replace that plastic part so you don't have to worry about it again. Otherwise you might be able to just cut the plastic with a dremel or something.
