In that last photo it appears to me that there is a bit too much angle on the strut. I believe it should be more level. This would cause the boat to flip if your CG was too far back & could most likely be the cause of the bouncing too.
For testing start with the strut angle level with the sponsons & the bottom of the drive dog level with the bottom of the sponsons at the transom.
If it seems to run wet raise the angle of the strut about 1/2 a degree & try again.

Which angle are you referring to? I can take a new more accurate pic so you can see better.
