You might consider the new Great Planes Escapade .40 ARF or the Phoenix Models Dolphin .40 ARF. These are two classic sport plane designs that would assembly very quickly. The canopies come pre-installed, the control surfaces come pre-hinged and pinned from the factory, and either can be ready to fly with just a few hours of final assembly.
Your Saito .82 would provide more than enough power for either. Congratulations on getting your first unscheduled landing out of the way!
