I had the same problem with my electric on grass.
Eventually I came to the conclusion there was just too much friction on the bow so the stern just lifted then when I gave it a nudge it would suddenly take off then flip. When the stern lifts the angle of the motor pushes the bow into the ground further making even more friction.

Try to angle the motor down a bit so its pushing down slightly on the stern.
