I would like to understand why opening the low end will resolve the problem ?
It is because the condition you describe indicates a lean mixture at idle, that is when you open the throttle and engine just dies. If you were to open the throttle and the engine sputters, stumbles, and smokes it would indicate a too rich mixture.
1 day before the engine was running very nice with this setting, and the day after, this problem come without touching nothing
That can happen if a piece of debris in the fuel clogs the passages in the spraybar. Do you use a fuel filter?
