Sounds like you have plenty of TX's and RX's to do anything you want. I have a number of Tx's and Rx's I saved from some of the RTF park flyer models I got when first starting out. Some are 27mHz and some are 72mHz setups. As long as the Tx and Rx match and the range is far enough using those you can pick and chose what you want to put in whatever.
GWS has a pretty broad range of foam kits that might suit your purposes quite well. From trainer style planes such as the Slow Stick and Tiger Moth to a decent collection of warbirds all in the 30" to 36" size. Those old TX's and RX's will probably work just fine in any of them especially if you are flying small fields and not going too far away from yourself. The ARF's available are pretty easy to build, the instructions are in chinglish but with some good pics to help keep you going in the right direction. It's worth a look and you might find something that will suit your fancy.
Like carrelh stated, there are a whole lot of choices and options to choose from.
