If you can find one the 50 size SIG Sundancer is great fun. A YS 63 (70) is a perfect engine for it! Unlimited vertical nice spins hard to stall nice glide path. It also fits in the back of my truck w/o disassembly. The quality is excellent and it goes together easily. I imagine the big one is good too!

If you are looking at building a kit, then a SIG Smith Miniplane is a decent one to fly.  A good recommendation is to add shear webbing into the wings.

I vote for the Skybolt as well, I built this kit, back in the 90's. It has a long tail moment, and thin wings, and it's top wing is swept, so that it is still flying after the botto, wing stalls. I flew mine with a YS 120 supercharged, and it was flat out awesome.

The Pitts is a close coupled design, so like someone earlier said it's gonna be alot more tippy, or snappy.

The GP Stearman, or their Curtis Hawk look like they would be good flyers as well.

I don't know if you had even thought of it. But my first biplane was the Hanger 9 Fokker DVII ARF. It's now the work horse of my WWI Jasta and I fly it about 6-8 times a year, and it's now 4 years old. It flies like it is on rails and it is a fantastic ARF to "bash" into a more realistic scale aircraft. The Fokker DVII is a tough bird and can take a beating. It gets a lot of attention from other fellow pilots and it goes together well. If you have little experience in building and or assembled a few ARF aircraft in your time, try to get your hands on one before they become more difficult to find.

I found one for you online just incase you're interested:

Hanger 9 decided to discontinue this nice plane. It's sad and I think they made a unwise decision. JMHO

I just built a GP Super stearman, flies great on a DLE 30 and with it being a nice bright Red you just can't go wrong. $100 cheaper then the same sized Waco.

If you would like to try a scale biplane, here's a few for you to consider:
