I bought a .60 size Edge 540 (64" wing span ) I also purchased 5 DS537 servos for it. I'm wondering if these will be adequate for this airplane or if I should buy some higher speed/torque servos for the flight controls

I assume you are not planning on doing 3D. Standard servos and 3D throws don't work out well at all.
Even for normal sport use, you probably ought to go with a higher torque servo for the rudder. For the elevators and ailerons, if you get the mechanical advantage correct, the standard servos should be fine.
Jim
PS: I notice the DS537 has been discontinued. I wonder why.

jrf,
I talked to Horizon Hobby this morning about the DS537. HH told me the DS537 was not selling like they had hoped it would. (probably the price) The Tech also said they would continue to sell the DS537 in the fight packs.
BTW. This is my first post on here. I am new to the Hobby and I am looking forward to many years of happy landings.
