How much trouble is it to take the dehidral (sp?) out of the superstar wing? Do ya make a angled wooden block to put in between the wing halves or chop on the wings themselves?

Well that all depends. Both ways you described will work, you want a flat top and let the natural dihedral of the root to tip taper be all that there is. How much is in the wing? because it will affect the wing bolt exit locations so you may have to open these up and use an insert to get the correct angles. Or new blocks in the fuse and redrill and tap.
What kit is it? It may not be worth the trouble...

I didn't think about that one, I was trying to figure who kitted a Haigh Superstar that had a one piece wing with dihedral...
If it is the Hobbico just sand the wing root rib a little on both sides to bring the angle closer to 90 degrees...
