I am considering a "beater airplane" for 2008. My goal was to keep it cheap and easy.
I have been flying for 20 years and have flown just about everything, so I do not need advice regarding which plane to start out on etc.
What I am looking for is anyone flying this plane and would an OS 55AX engine be enough or would the OS 75AX be too much?
Give me your thoughts, especially if you have experience with this plane.

The 55ax will be about right. The plane is much heavier than advertised. Comes in about 6.5 pounds with the 46/55 size engine. I flew mine with a TT46 and then a Tower Hobbies 75. The 75 adds a lot of weight up front and needs about three ounces in tail to offset. It is not a floater with that combo, but vertical is unlimited and it really scoots.
I recommend some aftermarket one piece landing gear. The rest of the plane is sturdy. The wing is thin and the control surfaces are small so this is a good pattern/speed plane not a 3d plane.

We have three flying at our field right now. All of them are running with OS AX.55. They are a lot of fun to fly and this engine is a very good choice. The Pheonix Landing gears are not the most forgiving, but in general the any of the Pheonix models are a good value. I also enjoy the 330 extra with an OS .91.
