This depened on your actual skill level. You mentioned your time on the sim and that you mastered the trainer but not what you can actually do without thinking about it. (IE, fling inverted for 10 minutes straight, use the rudder correctly, things like that)
In any case, any half decent Extra 330, 300, 260 is gonna be just fine. If you want to go to 27% on large glow, get the Great Planes Cap232, or the Great Planes Yak

Agreed Bubba, those are fun airplanes. Another one of the best second planes after the trainer gets mundane is an H9 Pulse XT. Great intro to low wing, tail dragger, and can be a mild relaxing flyer, and capable of beginner through intermediate acrobatics. Mine still goes to the field a couple of times a month.

inverted flight, flips, rolls, corkscrews, go arounds, hammerheads, immelmens, stall turns, dead stick, high speed passes, high altitude flight (1000ft) and pretty much any combination of any of these. can also hover easliy in sim in multiple different airplanes (without gyro).

Other than the high speed passes, you might give a thought to the OMP Edge 540 profile plane. You can do just about anything you want with it.
