Maybe I'm in the wrong forum, but I give it a shot here.
I just received a brand new Hitec Supreme RX (shift selectable) and on the first port before channe 1 it has a "select" slot with a factory installed looking plug. What is it? Do I begin plugging in the servos on the next port or do I remove the plug and begin with the first port.

The plug is for selecting between Hitec\Futaba or Airtronics\JR radios. There should be a sticker on the receiver showing the jumper configuration. On mine Hit\Fut is to the left, Airt\JR is to the right as you have it in your photo.

It did have instructions, but they didn't mention that. There is a sticker on there, I want to use the Hitec verison, so that plug goes into the "select" port to the left?

Correct, the red wires should be to the left with the open port to the outside. I don't really know that it matters if your radio has servo reversing though.

Yes, the instructions are about to drive me to drinking,,and I seldom drink.
Ok,,,so the plug type thing goes into the select port with two red wires go the the left, then followed by channel 1(elevator), 2 (rudder), 3(engine), 4 "Y" for ailerons?

You are correct on the jumper and the select port.
I have the Hitec-08RD and a JR 662 radio and my channels are:
Channel1: Throttle
Channel2: Ailerons
Channel3: Elevator
Channel4: Rudder
Channel5: Landing Gear
Channel6: Flaps
Channel7B: Battery
Yours may be different depending on Rx and Tx.

Just plug the jumper in and see if it works. If it doesn't try it the other way. You won't hurt anything, and if you do have the receiver looking for the shift in the wrong direction, nothing happens, or at most you get a bit of odd looking interference. It will be really obvious if its not right.
Found out about this the hard way. My Polk TX is shift selectable, and I have a mix of JR and Futaba RXs. More than once I've reprogrammed an entry with the wrong shift and had that "hey, nothing works. Oh, duh!" thing go on.
I moved a couple of planes from a JR x-347 to the Polk, I had to unplug and rearrage all the servo connections to the RX as the channel numbers were totally different. I moved a plane using a Futaba (tower) and I didn't have to change anything. I dunno about Hitec, but they seem to follow Futaba conventions most of the time, but I wouldn't be surrpsied if they had their own channel arrangements.

Mont,
thanks for chiming in. I left the jumper in the select port with the wires in a left hand lean. It worked just fine as it should.
