Default 10c vs 20c battery for electric skateboard build

Hello, I need some help with battery types. I am planning to build an electric skateboard which uses the same components of an RC car. I will use a 270kv (1800w) outrunner motor with max 60A, however I am not sure if it will be better to use (x2) multistar 10c 3s 5200mah 11.1v or (x2) zippy 20c 3s 5000mah 11.1v. I want to have good speed as well as having good run time. Will 10c give me enough speed or would it be more suitable to get the 20c zippy with slightly less run time. I also live in a fairy hot country so will there be a risk of any catching fire or getting damaged.

I would also like to know weather to use a 60, 70 or 80A ESC with the 60A motor.

I barely know anything about RC builds as I am very new to it.

Thank you
