Default Setting Throttle End Points???????

This is my first electric. How do I set the throttle stick on my radio?

Transmitter----JR
Battery---------Thunder Power 3 cell 2000mAh
Speed Control-Extreme Flight Brushless Airboss 35A
Motor-----------Extreme Flight Outrunner Torque 2830/1095

Everything that I have tried has had the throttle stick position & motor doing the opposite.

All you should have to do to reverse the motor direction on a brushless is swap two of the three wires.

Also your ESC should have a safe start where you have to set the trottle to off, to let it ARM. From my experience you start with the throttle at full position until it indicates somehow, to calibrate the max throttle. Then move the throttle to off, this will arm the unit, then just throttle up.
