For the Eclipse 7, a servo is plugged in to channel 7 and operates on a knob. How can I move that function to a switch and disable the knob?

A couple of options are to use channel #5 which is a switch or if you need to use channel #7 you can use the p-mix function and mix channel #7 to itself. This way when you flip the CH7 switch you will get whatever you have the knob set to. Be aware that typically you cannot get full travel using this method.
