Hitec Programmer question

I borrowed my buddy's Hitec servo programmer. It works great.
My question is regarding setting end points. Do you want to set them as far as they will ever travel? Or would the end point be the same as your high rates on your control surfaces? Or, just a little farther than your high rates, but still preventing over exension of the servo travel?
I'm just a little confused as to where to set the end points.

Typically you should leave the EPA's at default unless you are matching servos.
