Default 2 blade to a 3 bladed prop

Is there any reason I could not use a 3 blade prop on my Piper Arrow than I am building. Top Flite calls for 11X7. How do you do the conversion for the size difference?

If you power at the lower end of the power range, you will have problems with a 3-blade, however if you are using recommended max power, a 3-blade should be fine. Just drop 1" in pitch, or diameter from your 2 blade that flys the model best. Do not start with a 3-blade unless you really know what prop you want.
