40 series are definitely not too big for a LST!!
Here I compare some Panther Pythons on LOSI 420series (stock 40 series LST2 wheels) to some Bowties (Max sized on standard rims)

I personally dont like racing maxx size tires on my LST.. Could just be how all the tracks out here are really long with wide lanes, but I felt that my top speed was nearly cut in half down the straight when switching from pythons to CF MTR's.. Also felt a little more unstable.

Tire choice is all about what works for you and your track and how you like to drive. If you got the ca$h get several sets of different sizes and styles and then there are different compounds as well.
A good start is looking at what others at the track are running.
