ESC programming changes. No comprendo

Default ESC programming changes. No comprendo

I guess once I get the hang of what this says it should be easier. I cut and pasted the following programming on this post.
What I can't seem to understand is how to change what the esc is programmed to. Ex: how to change cell type? It doesn't really say how to change it; just what it's set to. I think they assume I've done it before.
And what is TIMING mode and what should it be?
Call me dense or what?

Thanks for any help understanding this:

Towerpro 30-N ESC Instruction Manual
A) Connection Step:
1) Connect the motor and receiver to the speed controller
2) Remove battery power from the speed controller.
3) Turn on the transmitter.
B) Programming Setup:
1) Move throttle stick to full power position (UP Position).
2) Reconnect battery power to the speed controller
3) After 3sec you can hear (all sound is 3times)

∮— — BRAKE
∮— — — TIMING MODE
∮— — — — PWM
4) When you need to go into the programming menu, move the throttle stick to MIDDLE position.
C) Programming Menu:
1) TYPE & NUMBER OF CELLS (AUTO-CUT VOLTAGE)
•— NiMh/Nicd AUTO(0.8V/CELL*)
•— — 3 LIPO (2.75V/CELL)
•— — — 4 LIPO(2.75V/CELL)
• — — — — 5 LIPO(2.75V/CELL)
2) BRAKE
••— NO
•••— — SOFT
•••— — — MID
•••— — — HARD
3) TIMING MODE
•••— 2 º
••••— — 7 º
•••••— — — 15º
•••••— — — — 30º
4) PWM
••••— 8KHZ
•••••— — 16KHZ
•••••••— — — 32KHZ
If the option is set as you need, then move the throttle stick to UP position.
After you hear the LONG BEEP, the option will be saved. Then the system will go to the programming menu and you can setup other options.
When all the required options are being setup OK, move the throttle stick to the DOWN position. After 1sec the system will save all options. Then you can start the motor now !!
D) Remarks:

It appears there could have been a better chinese to english translation. I googled Towerpro and found another set of instructions for another Towerpro esc and it is equally vague. I stopped flying electric a few years ago but am considering an electric plane build or two. I guess it would be money well spent to stay with Castle Creations. I still even have their PHX-Link where the esc can be setup on my computer. I recall that being a piece of cake.

Those are similar to instructions for the BP esc's I use. The codes are a little confusing the way its shown. In a nut shell, you listen to the code that matches the setting you want. When you hear it, move the throttle from max to mid point until you hear the confirmation beep (the long one I think in this case) then move the throttle back to max to continue on with the setting options. When I am done, I turn power off, go to minimum throttle and power back on to test it.

Clear as mud?
