it makes it so the diff gears have more friction
so whel one wheel is off the ground or turning the diff activates both sides more than w/o diff grease
its hard to explain but do you get what i mean???

ill try and explain it better
inside the diff is a diff case which holds your gears(not final gears/attatches to the side of the final gear)
and those gears allow either one wheel or the other to be spun at a time
except when going straight
the gears(when grease is packes in there)
will have some friction sort of thing goin on where they will have more resistance

the diff case gears basically allow both tires to be engaged when giong in a straight line but when the car is on 2 wheels or turning, the gears engage and allow either the left or right tire(the one off the ground) spin while the otherone gets very little power
and the diff grease allows more power to go to the wheel on the ground
