Default Batteries in Series and Parallel

I've seen some wires for series and parallel, while parallel looks simple enough, how does the series cable work? The ends with black and red go to batteries, and the end with two blacks go into ESC? Is that correct?

no, a red/black connector goes to ESC and 1 battery, and the black/black goes to a battery. Although in the androgynous connectors you linked there it wouldn't really matter....

That's a decent example, you see the female plug (going to ESC) and the 2 male plugs.

What it does is takes the positive from first battery goes to esc, then from the same battery takes negative and connects it to the positive of the second battery, then the negative from the second battery and that goes to ESC

A parallel connection combines the positives of the batteries into 1 single line, and the negatives into 1 single line. Therefore keeping the same voltage across the load and doubling the capacity. A series connection doubles the voltage across the load while keeping the capacity the same.
