How much difference would it make?
If I were to remove the electric starter and make it forward only in regards to weight and speed? Would it make that big of a difference? I like to auto-start and reverse, but if it would boost performance significantly to remove them, I will do so in a heartbeat.

Nah it only removes some weight and negligible resistance. The feature is more worth having than removing.
However thats purely based on my SPECULATION. I have no experience with MTs, but thats what my mechanical intuition says

comparing to the total weight of t-maxx, the weight of the starter motor is small.
of course, it will help the acceleration, but not visiblly.
you can change to pull start after the ez starter breaks which i know it may break sooner or later
