you will have to run the engine in again on a different fuel to get it suited to it, just do 5runs on a rich carb setting at no more than 3/4 throttle, once you have done 5 runs with it start to lean it out again until you get perfect tuning (good speed and not alot of smoke)

10% is okay, but watch your temps. That low of nitro and it will need to run leaner to run properly. Keep a sharp eye out for overheating.
Is the evader you're getting new or used? If it is new, you will need to break in the engine properly.
Switching back to 20% whenever you can will be fine. It will need to be run richer.
There's no voodoo to switching fuels. The best way to do it would be to set the carb back to factory specs, fire it up and tune from there. There's no reason to break it in again on a different fuel.
