what do you have for a radio, receiver and servos?
it may be time to upgrade to better electronics.
What are you using for a receiver pack? AA batteries (alkalines) or nimh/nicd?

If you have the funds readily available, upgrade to an FM radio at the least, or a 2.4 ghz system. Replace the servos with better servos of course. For steering, use one with higher torque. For throttle/brakes, a standard servo should do just fine.
AM systems pick up that jitter that servos tend to do, but then again, low quality servos are popular for doing that too.

Start out with a new servo to see if that clears out your problem. The electronics on the stock servo might be on their way out. Any dual bearing "standard" class servo will be fine.
For high torque on a budget: http://www3.towerhobbies.com/cgi-bin...&I=LXDTB3&P=ML
For a standard servo: http://www3.towerhobbies.com/cgi-bin...&I=LXVW07&P=ML
Either would be fine. the higher torque will give you more steering/holding power at higher speeds.
