I didn't read all post; but you have to consider that NACA 63A012 is a laminar airfoil; NACA0012 is turbulent... I'll expect better low speed peformance from the second one but perhaps I'll choos the laminar one for a pattern plane.

Why not try a symmetric glider acro profile from Helmut Quabeck. They are especially developed to keep the airflow from separating due to the real negative and positive changes of angle of attack during rolls. Take the HQ/A-0/12 or thicken it up to 13 %.
