I have not. BUT.
I have built torpedos that would work very well as the round pontoons.
They are Estes Rocket bodies with a nose cone. Cheap, ROUND, light, easy to cut, different sizes, STRONG, easily water proofed. They are made of wrapped cardboard. Nose cones are sealed plastic. Hop over to .....Estes Rockets........

Yep...well you weld together a bunch of 55 gallon drums...then you weld the superstructure together and plank it...a 25hp outboard and you are in business....
oh...for a model I am not sure where you would get the scale 55 gal drums....the big one was not too energy efficient...since I was too lazy to put anything on the front of the drums....but it was great fun when you got to the middle of the lake...

There was a spectacular aluminum hull for sale on Ebay a year back. I missed it by about 20 bucks.
It was a deck and the pontoons with an outboard motor mount, scale for the electric outboards made for a bit.
You could take paper towel tubes, epoxy coat them, add nose cones and build a basswood deck ,detail it all, balance it to hold up the Aquacraft outboard and have a nice model..... wait, just gave myself a winter project idea.
For a bigger boat you could epoxy some old spray cans together, like window cleaner cans and them fab nose cones. After that the deck and such should be straight forward.
Decorate with model dollhouse seats, carpet, other details.

Pretty much exaxtly like I pictured but with the pontoons coming out the front a bit like real ones and a bimini top like they usually have.
But that is damn nice for sure. Great work.

I think it was just thin wall plastic pipe.
He also had to build a "well" between the pontoons to hold the battery and electronics, which adds to the displacement.
