The methanol reacts with the glowplug to provide the spark, the nitromethane is for a bit more kick and also to ease tuning. Petrol for instance requires a air:fuel mixture between 16:1 (very lean) and 12:1 (very rich) - a fairly narrow range. Nitromethane on the other hand has a much wider range, as rich as 2:1 and as lean as 6:1 I believe, and it will still burn - so it's extremely tolerant of a wide range of tune, which is good because keeping the mixtures within a tight range over a wide rev/throttle range is difficult.
Planes - on the other hand - work over a smaller rev/throttle range and many can run with 0% nitro. But without that additive to widen the range of mixtures that the engine will run, they are probably more difficult to tune and run well only over a smaller rev/throttle range.
