I am not convinced that a microscopic film of oil will be adequate.
As someone who has burned out a couple of ESCs, and seen it done, my advice would be to
Mount the ESC in a waterproof compartment with a screw-down lid, all sealed with silicone bath sealant, including around the wires.
Use a finned aluminium heat sink to get the heat out.
