Since the main gear shifts to the rear in the down position, and the fuel tank is forward of the CG. I would balance the plane with the gear down with empty fuel tanks.

You need a piston stop, it's typically a made of aluminum and is threaded to fit the glowplug, look in the helicpter or car accessory section of your LHS. You install this in place of the glowplug...

Spin recovery in full scale aircraft isn't done the same way with all aircraft. Some will require the use of appropriate and abrupt elevator movement to break the stall to initiate the spin recovery....
