It seems most people (including the ones with the most experience) are flying fixed throttle, and just using throtlle curve programming in their radio to get what they want.

That is working well...

Tolla, it sounds as though you might be running 'auto calibrate' on throttle. (Setting 4). On that setting, run ANYTHING but option 1 with a Heli.

Did you reverse the throttle servo channel? It is required with a futaba TX and the CC ESCs (and nearly all ESCs for that matter).

My Pheonix 35 works great with the stock ATVs on that channel....

I also use my hold switch as a safety, while I am prepping to fly, etc.

My flight routine.

Sit down bird in take off area
Turn on transmitter
Flip all switch til the flight condition...

Also, I found the heli to be immensely easier to handle in wind if I flew in idle up, rather than normal mode.

I thought of another thing to look at as well.

Did you actually remove the tail boom to inspect that it was straight? They often bend right at retaining block, you'll never see it til you...
