Spray foam?

Is the spray foam insulation/ gap filler that can be bought at the store good for adding floatation to my Miss Vegas? I definetly need some extra to keep her from sinking. What is everyone using for the removeable cowl section?

Nope, thats not a good plan.
if you over spray the foam will split the hull and if you ever need to make some repair its a pain in the you now where to remove.
for my Vegas I have left a small strip of flotation in the cowl and have added a flat piece of pool noodle ( 4 x 5 ) at the back (between the transom and radio box).
The cowl floats no problem and so does the boat, and I race the Vegas with no plugs in the drain holes.

I dont think the MV can sink, unless you removed the foam built into the sponsons somehow. I too race with my plug out.
As to the cowl, I still have the stock foam in the cowl (both pieces).
