Probond works good, I am partial to epoxy and use it for most of my gluing chores, Foam friendly CA works good to hold parts or for spot gluing if you use a kicker with it, I also use GWS glue...

Check the CG, if the plane is a bit tail heavy it will want to climb, it is better to be a little nose heavy.
The CG being off will also cause stalls and in some cases porpusing ( climbing steeply...
