a balance plug in the battery - im assuming its where you plug in the balancer and it makes sure all the cells are the same voltage
MaH means (something) amps/hour (cant remember the first part) - and its the capacity, a 200MaH will last twice as long as a 1000Mah (in theory)
EDF planes - dunno
smart charger - check the manufacturers website

The M in mAh is Milli like Milliamp. Its the batterys capacity. The larger the number the longer it will last.
EDF just means electric ducted fan. What fan/motor you need depends on the plane your building.

More or less better? Depends on if you are talking about a battery or a load. A battery rated at a higher mah has greater capacity(power) inside. A motor that's rated at higher mah draws more power which sucks down that battery quicker but does usually make more threst while doing it.

but more current also means more power so that means you also have more thrust
actually instead of one onethousands of an amp, its will be more like a dozen or so amps , and with a few thousand mAh (i.e. a few amp hours) , you will end up with runtimes in the range of usually around less than an hour

It sounds like you are asking questions regarding an all electric aircraft. Check over in the "E-Flight Power Sources" discussion forums here:

Before you spend any more time please consult some folks with more experience with electrics. From your question regarding the balencing tap it sounds like you have a lithium polymer battery. If you don't understand what you are doing you could inadvertently damage your battery or worse. Lithium polymer, also called Li-po, can store a significant amount of energy. These batteries are safe to use in this hobby, if you understand what you're doing. A damaged Li-po can potentially catch fire if it is not handled properly.
The electric flight guys can help answer all your questions. Most folks in this particular forum work with glow engines.

balance plug is for lipo packs and you should use it when charging so that your packs are balanced. Things like fire and explosions happen when you get a pack too far out of balance.
mAh is capacity of a battery pack, think of it like gallons of gas. More is better, but to a point. You can't take a vw going down the road with 5000 gal of gas =P likewise you cannot take most aircraft off with too heavy of a battery, and the heavier the battery the less the manuverability. You just need to match your type of flying to your motor and plane.
all depends on the plane. edf is mostly for people who want a scale jet fighter look without the prop messing up the looks
