Is there a way to transfer the aircraft programming from my 10CAP to my new 18MZ other than by manually reprogramming each aircraft? Any helpful tips on doing it manually. Thanks.

Manually is the only way. You just start out at the basics...endpoints, subtrims, then go on to the expo and rates, and finally the mixes. Just carefully go through the different functions you've set and key them in. The basic percentages should be close, but please realize that they won't be exactly the same from transmitter to transmitter.

If you have models on the 12FG, and want to transfer them to a 12Z, 14MZ, or 18MZ, you save to the card and then use the Model Data Converter software. Download it from here:

The instructions are in a separate .pdf file.
The 18MZ is not shown as a destination in the Model Data Converter software, so you choose the 14MZ. When you're done, you just pop the SD card into the 18MZ and you're "good to go".

That may work for upconverting data file for use on the 18MZ but it fails when attempting to convert the other way around. I need to convert 18MZ file to 12Z files for use at the Nats in a week and a half. Is there anyway to do this besides the error prone, time-consuming manual method? I am out of time to do that and don't have both transmitters either. I do have a model file for the 18MZ version.

Has Futaba ever released their file formats so one can be easily created?

Too bad they couldn't take the trouble to make their files somewhat compatible so common data could be extracted. It can certainly be done despite the additional data in the 18.
As far as releasing the file format is concerned, I would consider that a choice Futaba made about their proprietary data. If Futaba considers their file format is so critical to their design that they won't release the structure layout, that's lame but obviously within their rights. But if they won't produce a file reader/editor, that is not fine. I'm sure that I'm not the first to ask for this and it isn't even a difficult job so I have to consider it a total lack of interest in their customers.
