Speaking of fuel lines, I have seen some bizarre things happen with them in the past.
OEventually we found that the inside hole was missing on the piece inside the fuel tank Apparently it was a solid plug of tubing right there.

I don't remember reading that the OP had checked the fuel tank. My apoligies if it was. Usually when you point the nose up and the engine dies, that is a sure sign that the fuel tube inside the fuel tank as a tear or hole in it. Usually the tear or hole forms right at the joint where it slips onto the fuel tube going through the stopper in the fuel tank. So then when you point the nose up, the air void in the fuel tank moves to the front of the fuel tank and the engine suddenly sucks some air and dies.
The other thing is the clunk on the fuel line inside the fuel tank. It may be rubbing up against the back of the fuel tank and being obstructed partially. The clunk should not quite be able to reach the back of the fuel tank.
Oh yeah, having the fuel tubing and clunk getting stuck or jammed into the front of the fuel tank will do this too. When you point the nose of the pane up the engine sucks air again and dies.

The engine was quiting while going vertical.
I was going to say clunk stuck in the front of the tank till I read that He had replaced all the fuel tubing as well as the fuel tank & bypassed the fuel dot.
I would trouble shoot by replacing the carb with a known good one.
