Will a standard symmetrical airfoil work in a tailess delta layout? ie, a NACA 0016?

Yes a symmetrical airfoil will work well on a tail less delta. I've built and flown several Laser Arrows and the airfoil is symmetrical. They fly rock solid and float like a sail plane during landing. The only problem with any delta is the tendency to tip stall. I put wing fences and tip plates on the Arrow and solved the problem. Symetrical is fine but you'll find you have to add a bit of up elevon trim for the reflex you need before your first flight. It won't trim with the elevons right on the center line.
