At center stick you should have 0 pitch. then adjust travels so you use full upward travel. As you noticed, if you go too far up it binds, this is normal, back it off till it clears and you're good....

For the spin issue, bring up the throttle more slowly, adjusting as needed. What you're fighting is that the bigger motor causes torque faster than the small tail motor can respond and counter it....
